The Coppa di Parma is a rarely known cured meat, made with pork shoulder, tasty, wonderful with a just fried gnocco fritto (a fried speciality from the region: a kind of very thin pizza dough fried and served hot!), as an appetizer, or just like this, by itself, in all its glory!
